Why did Benzema's goal not count as an assist from Griezmann?

Good question that you definitely should ask to your bookmaker.

Bets are usually settled by bookies using data from data companies, good chance that this goal counted as an unassisted goal.
(or the bet might just have been settled wrong)

Griezmann's shot on goal was parried by the keeper, then headed in unassisted by Benzema.
(  you might want to lookup clips of the goal from different camera angles )

One of the data companies that is used often is Optasports.
On their news/blog there used to be an article that was about what counts as football goal assists, but it is no longer available.
Maybe you can find it with the wayback machine?

According to the website of a bookmaker, the Opta definition of a goal assist is the following.

Goal Assist
The final touch (pass, pass-come-shot or any other touch) leading to the recipient of the ball scoring a goal.

If the final touch (as defined in bold) is deflected by an opposition player, the initiator is only given an assist if the receiving player was the likely intended destination of the touch.

If a shot on goal is blocked by an opposition player, is saved by a goalkeeper or hits the woodwork, and a goal is scored directly from the rebound, then an assist is awarded.

If a player shoots or passes the ball and forces an opposing player to put the ball in his own net, then an assist is awarded.

In the event of a penalty or free-kick, the player earning the penalty or free-kick (by drawing the foul or forcing a handball) is awarded an assist if a goal is directly scored, but not if he takes it himself, in which case no assist is given.

 

Based on that definition, I would surely let the bookmaker know that you think that Griezmann made an assist, and ask the bookmaker how they exactly came to settle your bet as a loss.
Thing is, if the bet had been settled as a loss because of a mistake in data, your bet is still a loss, but the bookmaker might be lenient with you.

I would not accept the customer support response as acceptable as the ESPN page is irrelevant.
Rizk support are fine people, but in this case not 100% knowledgeable about their own T&C:

From the Rizk Sports betting Terms & Conditions:
Statistical bets for teams and players (e.g. shots, shots on target, offsides, tackles, assists, passes etc) will be settled with statistics from Opta provided data and according to their definition of the statistics. 

I would refer them to the Opta provided data and ask to check if the bet has been settled according to Opta provided data.

Further, that as far as I know, the Opta definition of an assist is:
Goal Assist
The final touch (pass, pass-come-shot or any other touch) leading to the recipient of the ball scoring a goal.
If the final touch (as defined in bold) is deflected by an opposition player, the initiator is only given an assist if the receiving player was the likely intended destination of the touch.
If a shot on goal is blocked by an opposition player, is saved by a goalkeeper or hits the woodwork, and a goal is scored directly from the rebound, then an assist is awarded.

So if the bet has been settled according to Opta provided data, you disagree with the data.

Probably a lost cause but you never know.
Sportsbooks have been known for paying out losing bets for publicity reasons or because of leniency in similar cases.
